A traditional Assamese meal consists of Khar, a class of dishes named after the main ingredient, and ends with a Tenga, a sour dish. The food is usually served in bell metal utensils and that is how authentic Assamese food is relished.

Patot dia maas
Fish steamed in banana leaves is a delicacy you should not miss. This dish is quite popular during Assamese festivities and weddings. Fishes are wrapped and steamed in banana leaf, and later garnished with chopped onion, coriander and fresh green chillies.
For all the ones who have a sweet tooth, will totally relish this dish. A traditional delicacy, the Assamese do not mind having their doi-sira as breakfast. It is made out of moist flattened rice mixed with curd, cream and jaggery is a local favourite.
Pork with Laai Xaak
Assamese, have a soft corner for pork and they love to have this meat with mustard greens. The dish is cooked with finely chopped pork mixed with mustard greens with very less amount of mustard oil.
As they say ‘Khaar Khua Axomiya’ and Assamese love their cup of khaar curry. It is prepared with raw papaya, pulses and other ingredients. They are then filtered in water through dried banana peel’s extract. It is similar to sodium bicarbonate. Its aroma adds taste to the dish. It is generally consumed as a side dish with rice.
When in Assam do it like the Assamese. Well, the state is predominantly fish-eating with 90 per cent of its population being fish eaters. ‘Masor Tenga’ in Assam is not just a dish it is also an emotion. Great for summer, this dish is made of fish with slices of tomato/lemon/elephant apple.
Assam loves xaak, green veggies and one of the top lists would be fiddlehead fern or dhekia xaak. This vegetable commonly grows in the hilly regions of the Northeast. The Assamese love to have this vegetable cooked with tomatoes, lentils or just simple stir fry.
Be is aloo, begena or egg, Assamese folks love to have this side dish with rice. Most importantly one can find this in an Assamese thali as a side dish. It is prepared with mashed potatoes or with mashed eggplant, mixed with raw mustard oil, finely chopped green chillies and onions.
Banana flower(koldil) is one of the superfoods in Assam. People love to have it with finely chopped duck, chicken or fish. Banana flower has amazing health benefits–reduces free radical activity, manages diabetes, anaemia and is full of antioxidants.
Tekeli Pitha is rice flour cake with the filling of a mix of jaggery and grated coconut, steamed hot and served. This rice cake is a powerhouse of flavours. This Pitha goes very well with a cup of black tea. A complete breakfast to make your day!
Poita Bhaat or fermented rice is very popular in Assam. This dish is basically leftover cooked rice soaked in water and left overnight to ferment. You just need to season it with mustard oil and green chilies. Voila!
This fermented rice can also be relished next morning along with side dishes like mashed potato, boiled eggs, potato fry, fish fry or any other curry, onion, burnt red chillies, lemon, bhut jolokia to name a few.
